This recipe was probably my favorite recipe to test out. My husband LOVES bagels, my daughter LOVES raisins, I LOVE cinnamon and my youngest LOVES anything with cream cheese. So, no matter the modification, the test bagels were eaten. But, I finally came up with the perfect blend of spices for the cinnamon raisin bagel! Hope you enjoy!
Nothing quite like a homemade cinnamon raisin bagel!
Ingredient
- 1 cup hot water
- 1 cup raisins
- 3 cups flour (Bread, all purpose, or wheat)
- 1/2 tsp cinnamon
- 2 1/4 tsp instant yeast (1 package)
- 1 tsp salt
- 1 tbsp molasses
- 1/2 tbsp olive oil
- 1 tbsp baking soda + 5-6 cups water
- 1 egg (optional)
Directions
Step 1
In a medium bowl add 1 cup raisins and hot water. set aside and let hot water cool to warm while rehydrating the raisins (20-30 minutes).
Step 2
Add flour, cinnamon, yeast, salt, molasses, raisin & water, into a large bowl or stand mixer.
Step 3
Knead 10 min by hand or 5 min by stand mixer.
Step 4
Add water or flour, 1 tbsp at a time, as needed.
Step 5
Spread olive oil around a large bowl, place dough ball in bowl.
Step 6
Cover and place in a a warm location to let rise for 15 minutes.
Step 7
Boil 5-6 cups water with baking soda.
Step 8
Preheat oven to 425°F.
Step 9
Turn dough on floured surface and knead dough on floured surface until smooth.
Step 10
Cut into 6 pieces and mold into bagel shapes.
Step 11
Prepare paper towel on a cooling rack and line baking tray with parchment paper.
Step 12
Place bagel shaped dough into boiling baking soda water and boil on each side for 45 seconds.
Step 13
Place bagels on a paper towel to cool while you boil the rest of the dough.
Step 14
Move bagels to lined baking tray.
Step 15
Bake at 425°F for 15-18 minutes.
Step 16
Let cool on tray.
Slice, toast, and enjoy!
